Which food additives are halal, which depend on their source, and where scholars differ, with the reason for each ruling.

How to read this guide

Halal: made from plants, minerals, synthetically or by microbes, with no animal or alcohol source in normal production.
Depends on the source: can be made from plants or from animals (including pork). It is halal only if the source is plant-based or from animals slaughtered according to Sharia, so check the source or look for a halal certificate.
Scholars differ: Muslim scholars or halal certifiers hold different views. The reason is explained under the additive so you can follow the view you are convinced of or ask a scholar you trust.

Why?

Made from crushed cochineal insects. Scholars differ: many Hanafi and Shafi'i scholars do not permit eating insects, so they consider it impermissible, while Maliki scholars and some contemporary fatwa bodies permit it because it is not impure and is used in tiny amounts. Many halal certifiers avoid it to be cautious.

Why?

Gelatin is made from the skin and bones of animals or from fish. From fish or halal-slaughtered animals it is halal, and pork gelatin is not accepted by any halal certifier. Some Hanafi scholars hold that complete chemical transformation (istihalah) makes gelatin from non-slaughtered cattle permissible; most certification bodies do not accept this. Gelatin is not an E-number in the UK or EU, but 'E441' appears on some imported products.

Important general points

  • The ruling applies to the additive itself. Liquid colours and flavourings may be carried in alcohol, glycerol or gelatin, which affects the ruling.
  • Transformation (istihalah): some scholars, especially in the Hanafi school, hold that a substance that has completely changed chemically takes a new ruling. Most halal certification bodies do not apply this to pork or non-slaughtered animal sources and require the original source to be halal.
  • Insects: scholars differ on eating insects, which is why cochineal (E120) is disputed. Secretions such as honey, beeswax and, for most scholars, shellac are treated differently.
  • This guide is general. The decisive answer for a specific product is a valid halal certificate or written confirmation of the source from the manufacturer.
